After our fall rains here in the bay area is a great time to start looking for Miner’s Lettuce. I grew some in my planter bed and watered them regularly in addition to the rain and they got really big. They look a lot like lily pads to me. I took the really big ones that were well shaped in good condition and used them as a wrap for my tuna salad and they were super yumm! This is just one way to use them for a meal, what are some other ways you’ve used them? Comment below to let us know!
